PORK FRIED RICE 
3 c. uncooked rice - 6 c. water = 6 c. cooked white rice
3 tbsp. oil
3 eggs
1/2 c. chopped scallions
1 to 1 1/2 c. cooked, sliced pork
Soy sauce
Salt
Pepper
Saki (rice wine)

1. Heat wok to about 375 degrees. Put oil in bottom of wok. Break 3 eggs into wok and scramble. When scrambled and dry:

2. Add pork and scallions, stir until brown and heated through.

3. Add rice, soy sauce, saki and salt and pepper to taste. Serve immediately. Serves 6 generously.
