PORK FRIED RICE 
1 lb. pork strips or 2 healthy pork chops
2 c. UNCLE BEN'S® long grain rice
3 c. water (to cook rice in)
2 eggs
1 med. bottle soy sauce
4 - 6 scallions
1 c. chicken broth
1/2 c. water

Brown pork chops and set aside. Cook rice with 2 tablespoons butter, chicken broth and 3 cups water until tender, but not fully cooked. While the rice is cooking, dice the pork and the scallions; beat the eggs in a small bowl with a fork. Once the rice is cooked, scramble the eggs in a medium size pot in light oil, adding all the ingredients, including extra 1/2 cup water. Cook for about five minutes or until done. When serving, sprinkle some diced scallions over the top.
