PEAR CAKE 
2 c. all purpose flour
1/4 to 1/3 c. sugar, divided
1/2 tsp. salt
3/4 c. butter
1 egg, beaten
Milk
6 pears, peeled and halved

Sift together flour, 1 teaspoon sugar and salt. Cut in the butter until coarse crumbs form. Stir in egg and enough milk to form a soft dough. Pat in the bottom and half way up the sides of a 13 x 9 x 2 inch baking pan. Top dough with pear halves. Bake at 375 degrees for 30-40 minutes. Beat custard topping ingredients (1 egg, 1 cup cream and 1/2 cup sugar) and pour over cake. Bake an additional 15 minutes or until custard is set. Yields 12-16 servings.
