KATHI'S WET BURRITOS
4 super size flour tortillas (sold in pkg. of 8 in the dairy section)
1 lb. ground chuck
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1 tsp. cumin
2 c. refried beans
1/2 head lettuce, torn into bite-size pieces
3 tomatoes, cut up (about 2 c.)
Onion, chopped (if desired)
Sauce
8 oz. Colby cheese, grated

Brown meat with salt, pepper, garlic powder and cumin; drain off fat. On each tortilla spread beans, meat, lettuce, tomatoes and onion, if desired. Fold over sides of tortilla and roll up. Place in oven proof dish. Pour sauce generously over top. Sprinkle with cheese. Place under broiler until cheese melts. Or put in microwave oven on medium high for 3 minutes. Heat any remaining sauce and pour over burritos. Serves 4.

SAUCE:

1 c. meat mixture (from filling mixture)
2 c. water
1 can (8 oz.) tomato sauce
1 beef bouillon cube
1 tbsp. chili powder
Salt & pepper, to taste

Mix all ingredients and simmer for 15 minutes.

Note: The filled tortillas may be frozen successfully minus the lettuce, tomato and onion. The vegetables, and onion, if desired, can be added just before serving, spread over the burritos before adding the sauce, which also can be frozen.

Since microwave ovens vary in power, you may need to adjust your cooking time.
