BLACK BEAN AND GUACAMOLE
BURRITOS
 
large flour tortillas (about 6)
dairy sour cream (for dipping)

BLACK BEAN FILLING:

2 (12 oz.) cans black beans
1/2 medium yellow onion, sliced
1/2 tsp. cumin, or to taste
1 tbsp. extra virgin olive oil (EVOO)
salt and pepper, to taste
1 jalapeno (optional)

Heat olive oil in a medium saucepan on medium high. When olive oil begins to smoke, add sliced onions (and jalapeno if using). Saute, stirring occasionally, until onions are soft and just translucent. Add beans (with canning liquid) and cumin. Stir to combine.

Cover, reduce heat to low. Stirring often, let simmer until beans are heated through and liquid has reduced (10 to 15 minutes). Season to taste (remembering that the guacamole will also be salty). Meanwhile, prepare the guacamole.

GUACAMOLE:

2 small ripe avocados, peeled, seeded, and diced
1/4 medium onion, finely chopped (I like red onion best, but for this recipe just use the remainder of the yellow onion used for the bean filling)
3/4 tsp. garlic salt, or to taste
juice of 1 lime (or 1 1/2 tsp bottled lime or lemon juice)

In a medium bowl, mash avocados (using either 2 forks or a potato masher). When about half blended, add onion, garlic salt, and lime juice. Continue blending until almost smooth (but not completely).

Heat up a large fry pan, sauté pan, or griddle (medium high).

Place a tortilla on a clean and flat work surface. Spoon about 1/2 cup bean mixture slightly below center of tortilla, allowing border on all sides. Just above bean mixture, spread desired amount of guacamole on tortilla, again leaving a border.

Roll burrito tightly (bring bottom flap over filling, fold side flaps over, roll all the way closed, secure with a bit of water). Place seam-side down on hot pan or griddle and weigh down with something heavy (like another pan). When tortilla is slightly browned, flip burrito over and repeat. Serve with sour cream.

Note: To bulk up this burrito, combine 2 cups of cooked rice, the juice of 1-2 limes, and cilantro to taste. Add to bean mixture (you may need to add a small bit of water to bean mixture).

Makes enough filling for about 6 burritos.
