JOAN'S SAUERKRAUT SANDWICH 
This is an easy and surprisingly tasty lunch. A good way to use up leftover sauerkraut when you are out of hot dogs or pork.

PER SERVING:

2 slices rye bread
cream cheese, softened
2 tbsp. sauerkraut

Toast rye bread.

Heat sauerkraut in microwave until hot (or heat in small pot on stove-top).

Drain sauerkraut well.

Spread a good layer of cream cheese on one slice of bread. Top with heated sauerkraut and second slice of bread.

Enjoy!
