TACO SEASONING MIX 
3 tbsp. chili powder
2 tbsp. flour
2 tsp. ground cumin
2 tsp. dried oregano, crushed
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. cayenne pepper

1. To prepare the mix: in a plastic zip-type bag, combine the chili powder, flour, cumin, oregano, onion powder, garlic powder, salt and cayenne; shake the bag until completely mixed.

2. To prepare tacos from the mix: Brown 1 pound of lean ground beef with 1 finely chopped onion, 2 tablespoons chopped canned green chilies and a scant 1/4 cup of the seasoning mix. Cook until the meat is completely cooked, about 10 minutes. Drain off excess fat.

3. Divide 1/2 head shredded lettuce among 6 taco shells. Fill with the meat mixture, 4 plum tomatoes that have been seeded and chopped, 1 green onion, finely chopped, 1 1/2 cups shredded cheddar cheese, 1 cup salsa and 1/4 cup sour cream. This recipe will serve 6. Makes approximately 1/2 cup seasoning mix.
