FRIED CATFISH 
3/4 c. yellow cornmeal
1/4 c. flour
2 tsp. salt
1 tsp. cayenne pepper
1/4 tsp. garlic powder
Whole dressed catfish (cut up in 2x2 inch pieces)
Vegetable oil

Combine cornmeal, flour, salt, cayenne pepper and garlic. Coat catfish pieces with mixture. Shake off excess. Half fill deep pot or 12 inch skillet with oil. Heat to 350 degrees. Add single layer of catfish pieces -- frying until golden brown on each side. Turn each piece once. Remove and drain on paper towels. Repeat procedure until all pieces are fried. Serves 4.
