CAKE METHOD BLUEBERRY MUFFINS (Dairy) | |
1/2 c. sugar 3 tbsp. shortening 1 egg 2 c. flour 3 tsp. baking powder 1 c. milk 1 c. blueberries Beat sugar, shortening and egg at medium speed until very creamy. Sift dry ingredients together 2 or 3 times. Reserve 1/2 cup to mix with blueberries. Add dry ingredients and milk, alternately to creamed mixture and beat at medium speed until well mixed. Fold in the floured blueberries lightly. Put batter into greased and floured muffin tins. Sprinkle with sugar and bake at 400 degrees for 20-25 minutes. |
