ITALIAN POT ROAST 
3 lb. beef roast
2 tbsp. oil
1/2 diced onion
2 cloves crushed garlic
2 c. tomato sauce (8 oz.)
3 c. water
1 tsp. salt
1 1/2 tsp. oregano
1/2 tsp. thyme

Brown roast on all sides in oil with garlic and onion. Mix together remaining ingredients. Simmer 2-3 hours. An inexpensive pot roast in very good. Trim all fat.
