VEGETABLE MARINADE 
1/2 c. vegetable oil
1/3 - 1/2 c. red or white wine vinegar
1/4 c. minced parsley
2 garlic cloves, pressed
1 tbsp. Dijon mustard
1 tsp. honey
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. tarragon

Combine all ingredients and blend thoroughly. Pour over vegetables and chill at least 2 hours before serving.
