HUSH PUPPIES 
1 c. cornmeal
2 tsp. baking powder
1/2 tsp. salt
1 med. onion, finely chopped
1 egg, slightly beaten
1/3 c. milk
Vegetable oil

Combine cornmeal, baking powder, and salt; stir well. Add chopped onions and egg, mixing well. Slowly add milk, stirring just until dry ingredients are moistened. Carefully drop batter by tablespoonfuls into deep hot oil (375 degrees), cooking only a few at a time. Fry about 2 minutes. Turn and fry an additional 2 minutes or until Hush Puppies are a golden brown. Drain well on paper towels. Yield: 1 dozen.

You can add grated cheese (of any kind), if you want.
