NOODLE PUDDING 
12 oz. pkg. broad noodles
1/4 c. oil
1 lg. onion
5 eggs
Salt and pepper to taste

Preheat oven to 400 degrees. Cook noodles according to package. Heat oil in a 7 x 11 inch pan. Coarsely chop onion. Stir into hot oil until onions are lightly browned (around 4-5 minutes). Mix eggs well and add to drained noodles. Stir in oil/onion mixture. Bake one hour, uncovered.

Note: For a sweeter pudding, choose either alternate 1 or 2.

Alternate 1: Eliminate onion and add 1/2 cup raisins, 1/4 cup sugar, and 1 teaspoon cinnamon.

Alternate 2: Eliminate onion and add three grated and peeled apples, 1/3 cup brown sugar, and 1/2 tablespoon cinnamon.

Cut in squares and serve hot or cold.
