SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes, cooked
1 c. sugar
1/2 tsp. salt
2 eggs
1 stick butter
1/2 c. sweet milk
1 tsp. vanilla

Mix all ingredients together and pour into baking dish. Cover with the following topping.

TOPPING:

1/2 c. brown sugar
1/3 c. self-rising flour
1 c. chopped nuts
1/3 stick butter

Mix ingredients together and put on top of souffle. Bake for 30 minutes at 350 degrees.
