FUNNEL CAKES 
3 eggs, well beaten
2 c. milk
3 1/2 c. flour
1/3 c. sugar
1/2 tsp. salt
1 tbsp. baking powder

Beat eggs and milk. Gradually beat in flour, sugar, salt and baking powder. Beat until smooth. Use deep fryer or skillet with oil. Heat to frying temperature. Hold opening of funnel with finger. Fill with batter. Allow to flow, moving in a circular motion, starting in the center and working out. Fry 2 or 3 minutes or until brown. They will float. Oil temperature is 375 degrees. Sprinkle with powdered sugar and serve. Can also spread fruit filling on top.
