ZUCCHINI PIE 
4 c. zucchini
1 unbaked pie crust
1/2 c. brown sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. white sugar
1/4 tsp. salt
3 tbsp. flour
2 tbsp. butter
3 tbsp. lemon juice

Peel and slice zucchini and cover with boiling water. Let sit 5 minutes. Drain and put in unbaked pie crust. Cover with mixture of sugar, cinnamon, nutmeg, salt and flour. Dot with butter and sprinkle with lemon juice. Cover with top crust and bake at 450 degrees for 15 minutes. Reduce heat to 375 degrees and bake another 40-45 minutes.
