ZUCCHINI PIE 
6 c. peeled & sliced zucchini
3/4 c. sugar
1/8 tsp. nutmeg
1/4 tsp. salt
1/4 tsp. cinnamon
3 tbsp. flour
2 tbsp. lemon juice
1/2 c. brown sugar
1 unbaked pie shell

Cover sliced zucchini with water and bring to a boil. Turn heat off and let the zucchini sit in hot water about 15 minutes. Drain well and combine with the sugars, flour, lemon juice, salt, nutmeg and cinnamon.

Pour into an unbaked pie shell and bake at 400 degrees for 15 minutes. Turn oven down to 350 degrees and bake for 50 minutes more. No top crust is necessary.
