CANDIED YAMS 
4 lbs. yams, peeled & in 1/2 inch slices
4 apples, thinly sliced
1/2 c. low calorie butter
1 c. low calorie maple syrup
1 tsp. ground nutmeg

Boil yams and apples until nearly done in very little boiling water. In greased baking dish, place alternate layers of drained yams and sliced apples. Sprinkle with nutmeg. Dot with butter and drizzle with maple syrup. Pour 1/2 cup of apple water over the top. Wrap tightly and freeze if preparing a week ahead. Bake about 30 minutes or longer if frozen. Yields: 16 servings.
