BANANA DROP COOKIES 
3 lbs. (1 1/2 qts.) fresh ripe bananas, mashed
1 lb. 4 oz. (2 1/3 c.) (12) whole eggs
1 lb. 8 oz. (3 1/3 c.) shortening
3 tbsp. vanilla
4 lbs. (1 gal.) wheat general purpose flour, sifted
3 lbs. (6 3/4 c.) granulated sugar
1 3/4 oz. (1/4 c.) baking powder
2 1/4 tsp. baking soda
1 oz. (1 2/3 tbsp.) salt

1. Place ingredients in mixer bowl in order listed. Mix at low speed 1 to 2 minutes or until thoroughly blended. Scrape down bowl once during mixing.

2. Drop by tablespoons in rows, 4 by 6, onto lightly greased pan.

3. Bake about 12 minutes or until done at 400 degrees.

4. Loosen cookies from pan while still warm. Yield: 200 cookies.
