CHEESECAKE 
1 1/4 c. graham cracker crumbs (about 15 squares) or finely crushed whole
wheat flake cereal
2 tbsp. sugar
3 tbsp. butter, melted
2 (8 oz.) pkg. plus 3 oz. pkg. cream cheese, softened
1 c. sugar
2 tsp. grated lemon peel (you can use Real Lemon juice, same amount)
1/4 tsp. vanilla
3 eggs
1 c. dairy sour cream or cherry, strawberry or blueberry glaze

A graham cracker crust purchased at the store can be substituted for the first three ingredients.

Heat oven to 350 degrees. Mix cracker crumbs, 2 tablespoons sugar and butter. Press into bottom of 9 inch pie pan. Bake 10 minutes. Cool. Heat oven to 300 degrees. Beat cream cheese in large mixing bowl. Add 1 cup sugar gradually, beating until fluffy. Add lemon peel (or juice) and vanilla. Beat in 1 egg at a time. Pour over crumb mixture. Bake until center is firm, about 1 hour. Cool and top with glaze or sour cream.
