APPLESAUCE - NUT BREAD
3/4 c. sugar
1 c. applesauce
1/3 c. corn oil
2 eggs (or 4 egg whites plus 2 tsp. corn oil)
2 c. sifted all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. nutmeg
3/4 c. chopped pecans

Combine first five ingredients and mix well. Sift together flour, soda, baking powder, cinnamon, salt and nutmeg. Add to applesauce mixture. Stir in pecans. Pour batter into well oiled 9 x 5 inch loaf pan.

TOPPING:

Use nuts OR
1/4 c. brown sugar
1/2 tsp. cinnamon
1/4 c. chopped pecans

If using sugar, cinnamon and chopped pecans, combine them. Sprinkle topping over butter. Bake at 350 degrees for 1 hour (Cap loosley with foil after 30 minutes). I serve this lowfat bread as a coffee cake or light dessert. It is a recipe offered by the American Heart Association.
