APPLE RAISIN CREAM PIE 
7 to 8 c. apples, sliced 1/8-inch thick
1 c. sugar
1/2 c. flour
1/2 tsp. nutmeg
1 tsp. cinnamon
3/4 c. raisins
1 to 2 tsp. lemon rind, grated
1 tbsp. butter
3/4 c. heavy cream

Make favorite pastry; line bottom of pan with crust and set aside. Combine apples, sugar, flour, spices, raisins and lemon peel. Mix together well. Spoon in pan; dot with butter. Cover with top crust decorated with steam vents; seal edge. Cut 1-inch circle from dough in center to top crust. Bake at 400 degrees for 40 to 45 minutes. Remove pie from oven. Slowly pour cream in center of hole on top crust. Return to oven and bake 5 to 10 minutes longer. Let stand 5 minutes before cutting. Makes 1 (10-inch pie)
