SPANISH LASAGNA 
10 oz. pkg. fresh chopped spinach (cooked according to directions and drain)
1 lb. lasagna noodles, cook and drain
1 lg. Ragu or
Saute 1 medium onion, chopped
1/2 green pepper
3 teaspoons oil
2-7 lbs. canned tomatoes
1/4 c. fresh parsley, chopped
1 tsp. oregano
1 bay leaf
1/2 tsp. salt

Add tomato paste and tomatoes to onions. Break up larger tomato pieces. Add seasonings and simmer for 30 minutes.

1 lb. cottage cheese
1/2 c. Parmesan cheese
8 oz. Mozzarella cheese, grated
1 egg

Add cheeses and egg to spinach and mix well. Cover bottom of 9 x 13-inch pan with 1/3 tomato sauce. Cover with 1/3 noodles, 1/2 spinach mixture and 1/2 Mozzarella cheese. Repeat. Top with noodles and sauce. Sprinkle with Parmesan cheese. Bake at 350 degrees for 40 minutes.
