STUFFED BAKED SWEET POTATOES 
4 med. sweet potatoes
1 med. ripe banana, mashed
3 tbsp. butter
1/3 c. orange juice
1 tsp. salt
Chopped nuts

Scrub potatoes and oil skins. Bake in a preheated 375 degree oven about 1 hour or until done. The pulp can either be very carefully scooped out to save the skins for restuffing or the potatoes can be peeled and the mixture baked in a buttered casserole.

Mash the pulp with the banana, butter, orange juice, and salt or blend in a blender. Spoon the mixture into potato skins or casserole. Sprinkle with nuts and return to the oven for 12-15 minutes.
