FAST FOILED FISH | |
4 fresh or frozen fish (any choice) fillets 1/2 c. bottled buttermilk salad dressing 2 c. broccoli flowerets 1 red or green pepper, cut into strips 1 sm. sweet onion, thinly sliced 1 c. fresh mushrooms, sliced Place individual fish fillets on four 12 inch pieces of foil. Spoon 2 tablespoons of dressing over each fillet. Surround each fillet with 1/4 of each vegetable. Seal each packet by rolling edges together. Place each packet on baking sheet, or oven rack and bake in 450 degree oven for 20 to 25 minutes for fresh fillets and about 30 to 35 minutes for frozen fillets. Let stand 2 minutes before serving. Makes 4 servings. |
