POTATO CANDY 
1 average size cooked potato
Powdered sugar, as needed
Peanut butter (plain or crunchy)

Mash up well cooked potato. Mash until quite smooth. Then add powdered sugar. The mixture will become quite runny, but keep adding and mixing in powdered sugar until it gets like pie dough. Sprinkle powdered sugar on table and roll out like pie crust. Then spread with peanut butter and roll up like a jelly roll. Refrigerate for a while until set, then slice up in 1/4" slices. I usually make this at Christmas time. Freezes well too.
