JUSTINE AND MOMMY CAROL'S
SPANISH MEATLOAF
 
1 1/2 lbs. ground beef
Tomato sauce (any brand)
1/2 chopped onion
Dash of pepper
Adobo (Spanish seasoning)
Cheddar cheese

Combine all ingredients; mix well. (Reserve some cheese for top of meatloaf.) Shape mixture in a loaf in shallow baking dish. Bake at 350 degrees about 1 hour.

When baking, halfway through (1/2 hour), discard grease from dish and return to oven. When meatloaf is baked, take out and again drain grease from pan. Now, put the remaining cheese on top of meatloaf. Completely cover the top. Return to oven for about 5 minutes or until cheese is melted. Makes 5 to 7 servings.
