KAREN'S SPINACH SQUARES, PIE, OR
TARTS
 
1 (10 oz.) pkg. frozen chopped spinach
6 eggs
1 (3 oz.) pkg. cream cheese, softened
1/2 c. shredded sharp Cheddar cheese
1/2 c. shredded Swiss or Monterey Jack cheese
1/2 c. sliced mushrooms
1/2 c. chopped green or white onions
Pepper to taste
Clove of garlic, crushed
1/2 c. Parmesan cheese

Thaw spinach; squeeze out all excess water. Cream eggs and cheese; add spinach and other ingredients. Mix together. Preheat oven to 375 degrees. Pour into greased 9x9 inch baking dish or into deep dish pie shell and bake about 45 minutes. Cool slightly before cutting. Decrease cooking time for tarts. Yields: 6 to 8 servings.
