BUTTER TART PAN SQUARES
1/2 c. soft butter
1 c. flour
2 tbsp. sugar
2 eggs, beaten
1 1/2 c. brown sugar
3 tbsp. flour
1/2 tsp baking powder
1 tsp. vanilla
3/4 c. currant

Cream butter, mix in 1 cup flour and 2 tablespoons sugar. With floured fingers, press into ungreased 9 x 9 inch pan smoothly. Bake at 350 degrees for 15 minutes. While crust is baking, mix remaining ingredients together. Pour and spread filling over partially-baked crust. Return to oven and bake 20 to 30 minutes or until golden brown. Cool before cutting into squares.

Chopped walnuts or pecans may be substituted for currants, or a combination of both currants and nuts may be used.

While pressing crust mixture into pan, mixture stuck to spoon pressing down. I floured my spoon many times to keep mixture from sticking to spoon. Also I subsituted raisins for the currants.

Hi Donna,

Try sliding the spoon toward you as you press down on the mixture to help prevent sticking. Also, the spoon can be sprayed with non-stick spray or brushed with butter instead of dipping in flour which would tend to cause sticking.
