AUSTRIA - VIENNESE COCONUT MACAROONS | |
1/3 c. butter 1/2 c. sugar 2 eggs 2 tbsp. heavy cream 1/2 tsp. vanilla 1/2 c. flour 4 tbsp. cornstarch 1/2 tsp. baking powder 1 c. coconut 6 crushed vanilla wafers Cream butter and sugar. Add the well-beaten eggs, cream and vanilla. Sift the dry ingredients, and add to the first mixture. Add the coconut and wafers. Drop by teaspoonfuls, 1 inch apart, on a greased cookie sheet and bake in a moderate oven until brown on top. 8-10 minutes. |
