JUNIORS FAMOUS CHEESECAKE 
30 oz. cream cheese (softened)
1 lg. egg (room temperature)
1/2 c. heavy cream
7/8 c. sugar
3 tsp corn starch (sifted)
3/4 tsp. vanilla

Combine sugar and cornstarch and add to cream cheese in a large mixing bowl. Beat in egg and add heavy cream a little at a time. Add vanilla and beat until smooth. Pour into an 8 or 9 inch spring pan and bake in preheated oven at 450 degrees for 40 to 45 minutes. Cool approximately 3 hours before refrigerating.

GRAHAM CRACKER CRUST:

1 1/2 c. graham crumbs
3 tsp. melted butter

Combine and press into bottom and up the sides 2 inches of 8 or 9 inch pan. Bake for 5 minutes in preheated 325 degrees oven.
