CINCINNATI (SKYLINE) CHILI 
1 quart (4 cups) water
2 lb. ground beef
1 medium onion, finely chopped (optional)
2 (8 oz. ea.) cans tomato sauce
1/2 tsp. allspice
1/4 tsp. garlic powder
4 tbsp. chili powder
1 tsp. cumin
1 1/2 tsp. salt
1/2 tsp. red pepper
1/4 tsp. cloves
1 tbsp. unsweetened cocoa
2 tbsp. vinegar
1 to 3 bay leaves
2 tsp. Worcestershire sauce
2 tsp. cinnamon
4 drops Tabasco sauce

SUGGESTED TOPPINGS:

spaghetti noodles
shredded cheese
onion, chopped
beans

Put water and beef in a large pot. Let the meat dissolve in the water. Add onion and simmer on low for 30 minutes. Meat should be pea sized marbles, not chunky.

After 30 minutes add the rest of the ingredients and let simmer for an additional 2 to 3 hours.

When finished, place in refrigerator overnight. Skim off fat from top and serve.

TOPPING VARIATIONS:

 • 3-way: spaghetti, sauce, finely grated cheddar cheese.
 • 4-way: spaghetti, sauce, cheese, onions.
 • 5-way: spaghetti, sauce, cheese, onions, beans.
