1 lb. ground turkey 8 oz. lean ground pork 8 oz. lean ground beef 2 c. fresh bread crumbs (from about 3 slices bread) 1 med. size onion, chopped fine (1/2 c.) 1/4 c. chopped fresh parsley 2 tbsp. prepared mustard 2 tsp. minced garlic 2 tsp. dried basil leaves, crumbled 1 tsp. dried oregano leaves, crumbled 1/2 tsp. pepper Line a jelly roll pan or cookie sheet with waxed paper. Mix all ingredients in a large bowl until well blended. Form level tablespoonfuls into 1 inch balls, placing them in a single layer on lined pan. If necessary, cover with waxed paper and add second layer. Freeze 1 to 2 hours until hard. Pack, label, and store air-tight up to 2 months. Makes 75. |
