MEXICAN MEAT LOAF 
2 eggs, beaten
1/2 c. taco sauce
2 to 3 jalapeno peppers, minced
1/3 c. wheat breadcrumbs
1 tsp. salt
1/4 c. chopped onion
1 1/2 lbs. ground beef
1/4 c. taco sauce
1/3 c. (1.3 oz.) shredded Monterey Jack cheese

Combine first 6 ingredients in a large bowl; stir until blended. Add ground beef, and mix well. Shape into a 9 x 5-inch loaf; place on a lightly greased rack of a broiler pan. Spread 1/4 cup taco sauce on top of loaf.

Bake, uncovered, at 325 degrees for 1 hour. Sprinkle cheese on top of meat loaf; bake an additional 5 minutes or until cheese melts. Yield: 6 servings.
