PERSIMMON PUDDING CAKE 
1 c. sugar
1 c. flour
1/4 tsp. salt
1/4 tsp. cinnamon
2 tsp. baking soda
1/2 c. milk
1 c. persimmon pulp
1 tbsp. melted butter
1/2 c. raisins or dates, chopped
1 tsp. vanilla
1/2 c. chopped nuts

Sift all the dry ingredients together except the soda. Dissolve soda in milk. Add persimmon pulp and butter. Stir mixture into the dry ingredients. Add dates, vanilla and nuts. Bake in greased casserole for 1 hour at 350 degrees. Serve hot with lemon sauce, or cold with whipped cream.
