CHICKEN CROQUETTES 
1 whole chicken, boiled & deboned
4 tbsp. oil or butter
1/2 c. chopped onion
1/2 c. chopped celery
1/4 c. flour
1 tsp. salt
Dash pepper
2 c. bread crumbs
2 eggs
1 c. milk

Saute onion and celery in oil. Add flour, salt, pepper and milk. Stir to gravy thickness. Add chicken, stir and let cool. Beat eggs in a bowl. Put bread crumbs in a large plate. By heaping tablespoonful, put chicken mixture into crumbs and roll into a patty, then dip in eggs, then roll in bread crumbs again. Fry in hot oil until golden brown.
