1 c. vegetable shortening 2 c. brown sugar, packed 2 eggs 2 tsp. vanilla 3 c. flour 1 tsp. salt 2 tsp. baking soda 3/4 c. chopped nuts or coconut Cream shortening and sugar thoroughly. Add eggs, one at a time, beating after each addition. Blend in vanilla. Stir in dry ingredients, which have been mixed. Stir in nuts or coconut. Drop by heaping teaspoonsful onto greased cookie sheet, 2 inches apart. Bake at 350 degrees for 10 to 12 minutes. When cool, frost with the following icing. ICING: 2 c. sifted confectioners' sugar 3 tbsp. soft butter 1 tsp. vanilla 1 1/2 tbsp. milk, or more if needed Mix ingredients, adding enough milk to make icing of spreading consistency. Frost cookies. For Christmas, sprinkle with red or green colored sugar or tint frosting. |
