PEACH LUSCIOUS 
1/4 c. sugar
3 eggs, separated
3 tbsp. butter
Grated rind of 1 lemon
1 c. flour
1/2 c. milk
1/2 tsp. salt
3 tsp. baking powder
8-10 peaches
2/3 c. sugar
1 tbsp. lemon juice
1/3 c. sugar

Blend sugar, egg yolks and butter. Add dry ingredients and lemon rind alternately with milk. Grease sides of wide, shallow baking dish. Fill bottom with quartered peaches. Sprinkle sugar and lemon juice over peaches. Pour batter over peaches. Bake in 350 degree oven 30 minutes. Remove from oven. Cover with meringue (made from 3 egg whites and 1/3 cup sugar). Brown in slow oven, 325 degrees, about 15 minutes.
