CHICKEN CURRY | |
3 c. chicken, cooked & diced 2 Jalapeno peppers, finely chopped 2 onions, diced 3 tbsp. butter Dash of Worcestershire sauce 1/4 tsp. basil 1/4 tsp. oregano 1 tbsp. fresh ginger, chopped 3 shakes cayenne pepper 2 to 4 tbsp. curry paste 2 apples, peeled & diced 2 to 3 handfuls raisins 1 (8 oz.) sour cream 1 to 3 c. chicken broth 1 tsp. sugar Saute onion and pepper in butter until clear. Add Worcestershire sauce, basil, oregano, salt and pepper to taste, ginger, cayenne pepper, curry paste, apple and raisins. Cook all over medium heat 20 to 30 minutes, stirring frequently and keeping moist by adding chicken broth (Do Not Cover), add chicken, broth and sugar and cook gently for 2 hours. Push it if you like but keep a close eye, once it has all come together add sour cream. Serve with rice and chutney. |
