YAKIMESHI 
1 1/2 c. cooked chicken or beef, in bite-size pieces
2 c. vegetables, raw or cooked
1 1/2 c. raw rice
3 tbsp. cooking oil
3 tbsp. soy sauce

Onions, celery, carrots, green beans, snow peas, green peas, mushrooms, summer squash, etc. Cut into chunks or short strips. Carrots cook better if shredded with vegetable peeler, then cut into strips.

Cook rice. Saute vegetables in cooking oil, stirring constantly until barely tender. Add chicken or beef and rice. Toss to heat and mix. Season with soy sauce, adding more, if necessary.

I love fried rice dish.. Yakimeshi is essentially fried rice with various extras added to it.. I personally loved adding chicken or duck meat and then top it with egg sunny side up.. Nice!
