ARTICHOKE QUICHE 
18-inch pie crust
4 eggs
1 (8 oz.) pkg. Mozzarella cheese
1 pkg. frozen artichoke hearts, thawed
1/4 c. grated cheese
Salt and pepper to taste
Chopped salami, ham, or bacon (optional)

In large bowl beat eggs. Add salt, pepper, and grated cheese. Chop artichoke hearts and slice Mozzarella into small pieces. Add salami, ham, or bacon if desired.

Pour into pie crust. Bake 30-45 minutes at 350 degrees until golden.
