YEAST DOUGHNUTS 
1 c. water, lukewarm
2 cakes yeast
3 eggs
1 tsp. salt
1 c. milk
1 1/2 c. sugar
6 tbsp. butter
1 c. mashed potatoes

Mash potatoes well. Mix salt, eggs and butter. Add milk and potatoes. Dissolve yeast in warm water. Mix all together with enough flour to make stiff dough. Let rise until doubled. Cut with doughnut cutter and let rise 30 minutes. Fry in deep fat, either Crisco or Spry.

GLAZE:

Mix 1 pound confectioners' sugar with small amount of water. Add 1 teaspoon vanilla and pinch of salt. Dip warm doughnuts into this glaze and place on wire rack until dry.
