PICANTE SAUCE 
6 qts. tomatoes (chopped & peeled)
5 tbsp. salt
1/2 c. vinegar
1/4 c. sugar
1 1/2 - 2 tbsp. fresh garlic
6 c. bell pepper, chopped
6 c. onion, chopped
Jalapeno to taste (4-6)

Combine all ingredients and cook on medium heat for 50 to 60 minutes or until desired thickness. Makes 6 to 8 pints.
