MAPLE SWEET POTATOES 
4 lbs. sweet potatoes
2 tbsp. butter
1/4 c. maple pancake syrup

Bring large pot of water to boil. Add sweet potatoes and boil gently 25 to 30 minutes until tender. Drain and let cool slightly. Peel potatoes (pull or slip off skins) and cut them up. Put them in a large bowl. Add butter and syrup and mash until smooth. Spoon into serving bowl and serve.
