CHILE VERDE 
4 pork chops
1 onion, chopped
5 tbsp. flour
4 c. water
1/4 tsp. garlic
1/2 tsp. red pepper
1/2 tsp. oregano
2/3 tsp. cumin
2 (7 oz.) cans chopped chilies

Cut fat off pork; cut into bite size pieces. Fry until well done. Remove from pan. Fry onion until tender. Remove from pan. Add 3 1/2 cups water to drippings and bring to a boil. Mix flour with 1/2 cup water until smooth. Add to boiling water to make gravy. Add all other ingredients to gravy. Simmer at least 10 minutes.
