3 c. hot mashed sweet potatoes
2 tbsp. butter
2 c. sugar
1 tsp. baking powder
2 tsp. pumpkin pie spice
3 eggs
1 c. buttermilk
1 tsp. baking soda
2 unbaked pie crusts

Combine potatoes and butter. Combine sugar, baking powder, and spices. Mix well. Add to sweet potato mixture. Beat eggs until frothy. Add soda to buttermilk. Mix all ingredients very well. Pour into pie shells. Bake 10 minutes at 400 degrees. Turn oven to 300 degrees and bake 45 minutes or until knife inserted into center comes out clean.
