HONEY NUT CHEERIO CRISPS
I came up with this recipe to help my husband (who loves Honey Nut Cheerios but is lactose intolerant and doesn't like imitation milk) and has had a heart attack. Flax is good to keep the body moving properly on the inside. We've also happily learned that dark chocolate is heart smart eaten in moderation and I find it actually lifts the spirit) so now we both can enjoy sweets and stay within a safe healthy zone.

4 cups chopped Honey Nut Cheerios
1/2 cup chopped flax seed
1/2 cup chopped nuts (your favorite kind)
1 (10 oz.) pkg. marshmallows
favorite flavorings: dashes of spices and/or extracts (optional)
1/2 to 3/4 cup dark chocolate (can use milk chocolate but dark is better for your health)

Chop or process - by pulsing - Cheerios until they are chunky looking, Add chopped flax seed. You'll have a lot of crumbs, that's okay, tasty even, and bigger chunks should look rice crispy sized. Then transfer to large bowl. Add/stir in the chopped nuts. Mix with spoon to blend. Set aside.

Heat marshmallows over double-boiler (or glass bowl over saucepan) until smooth texture. When this looks creamy add flavoring if desired: cinnamon, vanilla, etc. (this is optional).

Pour over dry mixture. Stir until well coated. Place in lightly greased 8x8-inch pan/dish. Pat to a flat level in pan (butter or olive oil on fingers helps).

Melt chocolate in double boiler until smooth.

Then spread/frost Cheerio mixture and let cool.

When cool cut into bit size pieces and serve some then store rest in airtight container. Unless, you have a large group to feed then serve it all when needed.

Enjoy!
