PINEAPPLE-PORK STIR-FRY 
1 1/4 lbs. center cut boneless pork, cut into 2 x 1/2 inch strips
1 tbsp. + 1 tsp. vegetable oil
2 tbsp. cornstarch
1/4 tsp. ground ginger
1/8 tsp. ground cloves
2 c. fresh snow peas, stems removed
1 med. red bell pepper, seeded and cut into strips
2 c. drained canned pineapple chunks in natural juice (reserve juice)
2 tbsp. reduced sodium soy sauce

Preheat broiler. On broiler rack, 5 inches from heat, broil pork 2 minutes on each side - remove and let cool.

In a 12 inch non-stick skillet or wok, over high heat, heat oil until almost smoking.

In plastic bag, combine cornstarch, ginger and cloves; toss pork strips in mix to coat; set aside.

Add snow peas and pepper to skillet; stir and cook 1 minute. Add pork; stir and cook 2 minutes, then add pineapple chunks, 1/3 cup of the juice and the soy sauce; cook 1 minute. Serve at once. Makes 4 servings. Each serving = 4 Pro, 1 1/2 Veg, 1 Fat, 1 Fruit, 15 calories.
