BRANDIED YAMS 
2 (16 oz.) cans yams
1 c. brown sugar
2 tbsp. cornstarch
1/2 tsp. salt
1 c. orange juice
1/2 c. raisins
1/2 c. butter
6 tbsp. Brandy
1/4 c. nuts, chopped
1 tsp. orange peel

Place yams in baking dish. Salt to taste. Combine sugar, salt, and cornstarch in saucepan. Blend in orange juice and raisins. Bring to a boil, stirring constantly. Add butter, nuts, brandy, orange peel and bring to a boil. Pour over yams. Bake at 350 degrees for 45 minutes. Sauce will thicken while baking. Serves 8.
