BLUEBERRY BANANA MUFFINS 
2/3 c. mashed ripe bananas
1 tbsp. dark rum
1 lg. egg
1/2 c. buttermilk
1 stick butter
3/4 c. sugar
2 c. unbleached flour
1/3 tsp. salt
1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 c. fresh blueberries

Combine ingredients and pour into greased muffin pans, filling 2/3 full.

Sprinkle with sugar or cinnamon sugar, if desired.

Bake at 375°F for 20 minutes or until muffins test done.
